3 medium desert apples, Braeburn or Cox’s peeled and sliced
350g brambles or blueberries
100g caster sugar
100g butter
1 eg beaten
120g self-raising flour
50ml milk
Zest of 1 lemon
Flaked almonds for topping
Method
Sponge mix
Make this before peeling the apples, to avoid them going brown.
In a large bowl, cream the butter and sugar together until the mixture is creamy white.
Add the beaten egg and mix together
Add lemon zest and milk and mix again
Gradually fold in the flour a little at a time until you have an even mix and the flour is absorbed
To assemble
Peel apples and slice. Add a layer of sliced apple to the bottom of a baking dish and sprinkle over some of the sugar
Then add a layer of brambles or blueberries
Add another layer of apple and sugar followed by more brambles or blueberries
Pour the sponge mixture over and spread evenly to cover the fruit. Sprinkle over flaked almonds
Bake in a preheat oven 180C/160C fan/gas 4 for 35 to 40 minutes.
Serve with custard or cream
