Ingredients (serves 2)
160g Tagliatelle (or any other type of pasta)
3 Sausages of your choice
100g Smoked Pancetta (or bacon lardons)
Parmesan to taste, grated
2 Garlic Cloves, thinly grated
3 tbsp Vegetable Oil
30ml Red Wine
1 tbsp Tomato Paste
200ml Double Cream
Salt to taste
1tbsp Rosemary
Method
Bring a large pot of salted water to boil over high heat then add pasta and cook for 2 minutes less than what’s indicated on the pack. To a separate large pan over medium heat, add the vegetable oil, sausage and pancetta. Break the sausage down with a spoon, season with salt and cook until golden (around 8 minutes). Add rosemary and red wine and let cook until you can’t smell the alcohol anymore (about 3 minutes). Add chopped garlic and tomato paste and cook for a further minute. Then add double cream, mix everything together and bring to a simmer. Lower the heat and cook until the mixture reaches your preferred texture. Drain your pasta, and combine with your mixture before you can plate up and enjoy!
