Do you remember the little Be-ro recipe book? I was clearing out a cupboard and came across my mums, a little battered and well-thumbed with ticks against the recipes she regularly made. Macaroons were were one of her favourites, these were a treat on a Sunday afternoon, with a cup of tea.
Ingredients
2oz caster sugar
2oz ground almonds
A pack of ready rolled shortcrust pastry (mum would make her own)
A little raspberry jam
1 egg (beaten)
Method
Mix the ground almond and sugar with sufficient egg to make a soft mixture (a whole egg is rather too much)
Roll our the pastry and cut out 12 rounds to fit a tart tray. Put one third of a teaspoon of jam in each, then one teaspoonful of almond mixture.
Cut thin strips from the off cuts of pastry and lay them across the tarts at right angles.
Bake in a hot oven 200C fan/gas 7 for around 20 minutes. A dusting of icing sugar finishes them off.
