This quick and easy recipe is the ultimate comfort food and one of my favourite after-school meals growing up! A perfect balance between sweet yet slightly bitter aubergines, smoky cheese and salty tuna makes an incredibly rich and flavour-packed pasta dish.
Ingredients (serves 2)
160g Pasta
160g Canned Tuna
1 Aubergine, cubed
80g Smoked Cheese
400g Tomato Passata
Sunflower Oil (to coat the pan)
4tbsp Olive Oil
Salt and Pepper
Method
Boil your pasta in salted water, cooking for 2 minutes less than what’s indicated on the box. Heat sunflower oil to 170 degrees and fry the aubergines until golden, then set aside in a bowl with some paper towel to absorb the excess oil. Remove excess oil from the pan then, over medium heat, add tomato passata, tuna, salt, pepper and olive oil. Drain your pasta, lower the heat and add it to the pan, as well as the aubergines and smoked cheese. Cook until the cheese is fully melted then plate up and enjoy!
